  4. Take 1 tbsp olive oil
  5. Provide 3 green peppers - diced

  7. Get 48 oz seasoned tomato sauce ( 2 - 24 oz cans - i use a onion garlic sauce )
  8. Provide 1 14.5 oz can petite diced tomatoes, undrained
  9. Get 1 tbsp parsley
  10. Provide 1 tsp salt
  11. Prepare 1 tsp basil
  12. Provide 1/2 tsp garlic powder
  13. Take 1/2 tsp paprika
  14. You need 1/4 tsp pepper
  15. Prepare 1 1/2 cup marble jack / colby jack shredded cheese
Steps to make Stuffed Pepper Casserole:
  1. Preheat oven to 350°
  2. Combine rice and water & cook to your preference / bag instructions. Set aside when finished.
  3. In a LARGE skillet brown ground beef. Drain. Remove from skillet, set aside.
  4. In same skillet - saute onion and peppers with olive oil over medium heat for 10 - 15 minutes or until peppers start to become tender. Peppers don't have to be completely tender at this point.
  5. Stir meat and all remaining ingredients into skillet EXCEPT rice.
  6. Mix well - let everything simmer for a few minutes stirring often.
  7. Mix rice in.
  8. Pour mixture into a greased 9x13 baking dish. Bake for 30 minutes. Remove dish from oven and sprinkle top of casserole with shredded cheese. Bake for another 5 minutes.
