  1. Prepare 1/2 packages Shredded Red Cabbage
  2. You need 1 packages Shredded Cabbage Mix
  3. Prepare 1/2 packages Broccoli Cabbage
  4. Get 1/2 cup Shredded Carrots
  5. Use 1 cup Chow Mien Noodles
  6. Prepare 1/2 bunch Cilantro
  7. Use 1 tbsp Finely Chopped Red Onion
  8. Provide 1/2 each Red Bell Pepper
  9. Provide 1/2 each Yellow Bell Pepper
  10. Use 1/2 cup Sesame Seed Oil
  11. Provide 1/4 cup Rice Vinegar
  12. Use 1 1/2 tbsp Sugar
  13. You need 1 tbsp Sesame Seeds
  14. Prepare 1 1/2 each Chicken Breast
  15. Take 1 packages Spring Roll Wrapper/Rice Paper
  16. You need 1 Dipping Sauce of Choice
Instructions to make Easy & Healthy_Sesame & Chicken Spring Rolls:
  1. Add red cabbage, shredded cabbage, broccoli cabbage, shredded carrots, and chow mien noodles into a large mixing bowl.
  2. Chop cilantro. Add to mixing bowl.
  3. Finely chop the red and yellow pepper. Add to mixing bowl.
  4. Finely chop enough red onion for 1/8 cup. Add to mixing bowl. ** you may want to consider adding a dash of chopped pickled ginger for a bit more spice **
  5. Add sesame oil, sesame seeds, rice vinegar, and sugar to mixing bowl.
  6. Mix all ingredients together.
  7. Season and cook chicken breasts to your liking. (I coated the chicken in olive oil and season with a sesame ginger seasoning. I grilled until fully cooked.) Once cooked thinly slice and cut into small pieces. Let the chicken cool for 5 minutes and then add to mixing bowl with other ingredients.
  8. Fill 1/2 a large mixing bowl with hot water. Take one rice paper round and put it into the hot water. Let it sit in the water for about 20 seconds until it reaches a latex consistency. Take it out of the water, lay flat and blot access water with a paper towel
  9. On the lower 1/3 of the rice paper, add about one scoop full of cabbage mixture on top of the paper. Fold the right and left sides of the paper over the mixture. Firmly holding the mixture, roll the mixture up wrapping the paper all around the mixture.
  10. Repeat steps 8 and 9 until all of cabbage mixture is used up. Or until you have made desired amount of spring rolls. (Remaining mixture is great for a side dish or snack later!)
  11. Once rolls are all wrapped, place in the fridge for 3-5 minutes.
  12. Dish out desired dipping sauces.
  13. Once rolls are cool, cut in 1/2, and then plate.
