Steps to make Vegetables spicy cake (Handvo):
- In a big bowl mix warm water & curd. Mix it well and then add handva flour & wheat flour. Mix everything with spoon. You can add water if required. Close the lid it and keep it aside for 6-7 hours for fermentation.
- After 6 hours add grated bottle gourd, leftover sabji and sprout salad in a handva batter. Also add salt, turmeric, green chili ginger garlic paste, jaggery, pavbhaji masalo, asafoetida, carom seeds, fennel seeds for flavor. mix everything well. Just before you start making handva, add eno & oil in batter and mix gently.
- To make handva, In a pan, heat 2 tbsp oil and mustard seeds. let it crackle and then add sesame seeds. now pour batter and evenly spread it. Now cover & let it cook.
- Cover for 5-6 minutes on low flame after 6 minutes check it and flip it. Again cover & cook it for 5 minutes. our vegetables spicy cake (Handva) is ready. Enjoy it with curd or tomato sauce or green chutney.
