- Get 1 lb head on shrimp
- Provide 4 cups water
- Take 2 stalks lemongrass
- You need 10 slices galangal (white ginger)
- Provide 6 large kaffir lime leaves
- Use 3 tbsp Thai chili in oil sauce
- Provide 2-4 birds eye chilis to taste
- Use 3 tbsp fish sauce

- Shell and devein shrimp. Saute the shells and heads in a large pot for 10 minutes
- Deglaze pot with 4 cups of water and simmer for 15 - 20 minutes
- Remove shells and shrimp heads.
