The ingredients needed to prepare Tomato Basil and Garlic Soup:
- Prepare 4 Ripe red tomatoes ,medium sized, chopped
- Use 5 cloves Crushed garlic
- Provide 4 cups Water or vegetable stock
- Prepare 1 tsp Olive oil
- Prepare 1 tsp Black peppers crushed
- Take 1 tsp Paprika
- Prepare 1+1/2 tsp dry basil leaves
- Take 1/2 tsp Mixed herbs
- Provide to taste Salt
- Take 1/2 tsp Sugar
Instructions to make Tomato Basil and Garlic Soup:
- Heat a soup pot or deep pan. Add olive oil. When it heats, add crushed garlic and saute till it gets crisp.
- Then add tomatoes, black pepper, mixed herbs and saute well. Add 1/2 tsp salt and sugar and keep mixing and cooking on medium flame till tomatoes are a bit soft.
- Then add 1 cup stock or hot water, cover and cook for 5 to 8 minutes or till tomatoes are very soft and mashed.
- Then switch off the flame and add basil, remaining herbs and cool till warm.
- Then put the mixture in blender and make a smooth paste. You can strain the soup if desired. Again add rest of stock/ water and keep to boil on low flame. Adjust the flavours as per your liking.
- As it reaches one boil, switch off flame and pour in soup bowls. Garnish with fresh herbs and serve piping hot with sandwiches or any other side dish. Enjoy.
