The ingredients needed to prepare Mediterranean Salad:
- Take 1 lb box of orzo pasta
- You need 2 red bell peppers, seeded and diced small
- Provide 3/4 cup kalamatta olives, pitted
- Take 6 green onions, thin slice
- Take 6 oz crumbled feta cheese
- Take 1/4 cup extra virgin olive oil
- Use 1/4 cup red wine viegar
- Get 1 tsp salt
- Get 1 tsp ground pepper
- Get 3 clove garlic, minced
- Take 1/4 cup chopped fresh parsley
- Take 1/2 tsp red pepper flakes(optional)
- Get 1 anchiove fillet (optional) finely chopped

- In large pot of salted boiling water, cook orzo for 8-10 minutes or until desired doneness. Drain.
- In another bowl mix garlic, salt and pepper,anchiove and pepper flakes if using, oil and vinegar. Set aside.
- Into pasta add peppers, onion, olives, and feta. Toss in oil and vinegar mixture. Toss well and add parsley last.
- Can serve warm or refrigerate one hour before serving.
