The ingredients needed to prepare 3-in-1 Breaded Rice Cake:
- Take 4 slices white bread
- Prepare 100 g Chinese brown rice cake
- Use 300 g sweet potato (orange flesh)
- Take 300 g yam
- Provide 250 ml fresh milk
- Use 1 egg
- You need 100 g self-raising flour
- Take frying oil (enough to cover rice cake)
Instructions to make 3-in-1 Breaded Rice Cake:
- DIY bread crumbs - Blend the bread to coarse crumbs. Pour the crumbs into skillet. Use medium heat and keep stirring until the crumbs become dry and slightly hard but not toasted! Set it one side to cool down.
- Cut the rice cake into square pieces and put it one side. - Cut both sweet potato and yam into small pieces and steam it for 15mins. - If you like chucky texture, take some of them and cut it into smaller chucks. Set it aside.
- Mash the remaining sweet potato and yam separately. Add some fresh milk and mash until they are smooth and just sticky enough to mould into shapes. - Add the chucks back into the mashed sweet potato and yam.
- Sandwich the rice cake with sweet potato and yam on each side. Mould it into an oval shape.
- Dip rice cake into self-raising flour. Shake it and then dip it into beaten egg. Lastly, dip it into bread crumbs.
- Pour oil into a pot just enough to cover the rice cake. Heat up oil with big fire. - When oil is ready, switch to low fire and deep fry the rice cake until golden brown. - Drain excess oil on grill tray.
