  11. Lightly spray the tops w olive oil
  12. Bake at 350 for 20-30 min / until egg is cooked through
  13. Remove cupcakes & let cool on a paper towel.
  14. Refrigerate each in a separate wrap or bag for easy grab & go.
  15. You can even freeze some for later, just thaw in fridge overnight.
