- Take 3 eggs large Whites of (whisked)
- Prepare 2 tablespoons milk skim
- Use 40 g Spinach (coarsely chopped) / 1½ oz .
- Get 40 g Mushrooms (sliced) / 1½ oz .
- Take 1 scallion spring onion / (thinly sliced)
- Use 40 g tomato (chopped) / 1½ oz .
- Provide ¼ teaspoon white pepper

- Whisk the eggs with the milk and pepper. Pre-heat a broiler / grill.
- Spray a fry pan with Spray2Cook and place on the heat. When the Spray2Cook is bubbling put the vegetables other than the spinach into the pan and scatter the tomato over them.
- Keep everything moving and cook for 2 minutes before adding the spinach for 1 minute. Spray the pan again trying to get as much as the base as possible covered then add the egg.
- Stir quickly and well then feather the egg away from the edges of the pan before transferring to the broiler / grill.
- Do not leave the pan on the hob for long as with only Spray2Cook - the egg will soon catch. When the egg has set remove the pan from the broiler / grill and serve.
