  1. Make sure your eggs at room temperature, so take them out of the fridge an hour or so boiling them, if the eggs are cold, they'll crack when they're cooking.
  2. Test to see if your egg is fresh, I do this by dropping the egg gently into a glass of water, if it sinks and lies flat then the egg is fresh, if it sinks and rises a few times then it isn't fresh but it's ok, if it floats straight to the top then it's stale
  3. Bring a saucepan of water to a boil
  4. Reduce the heat and carefully drop the egg in with a spoon
  5. Turn up the heat and bring it to a boil again, then reduce it and leave it to simmer
  6. Simmer it for approximately 3 and a half minutes for a hard white and runny middle
  7. Take the egg out with a spoon and cut off the top with a spoon, flavour it to taste with salt and pepper
