The ingredients needed to cook Multi Millets Idli Dosa:
- Use 1 cup Varagu (varai)
- You need 1 cup Kuthiraivali (Fox tail millet)
- Use 1 cup Thinnai
- Use 1 cup white chollam (Jowar)
- Provide 1/2 cup kambu(bajra)
- You need 1/2 cup Ragi
- Use 1/4 cup sabudana/sago
- Get 1 1/4 cup Urad dal
- Provide 1 tsp methi seeds(fenugreek)
- Prepare to taste Salt
Instructions to make Multi Millets Idli Dosa:
- Clean all the millets and wash it twice or thrice.Measure all the ingredients by using the same cup whichever you take. It is 5: 1 ratio. That is take all millets which will be 5 cups and 1 cup Urad dal. Here I have taken 1/4 cup Urad dal more as it depends on the Urad dal.
- Wash it properly and soak these millets for 7 to 8 hours. In morning you can soak and grind it by evening. Wash saburdana and soak it with millets. Wash and soak Urad dal and methi separately. Urad dal can be soaked for about four hours.
- In the evening first grind Urad dal. Remove it in big container. Then grind all the millets. It should be grinded to a smooth paste.
- After millets are grinded to smooth paste remove it in same container in which grinded Urad dal batter is there. Mix all the batter with hand and add salt as required. Allow the batter to ferment for about 10 to 11 hours.
- Next morning the batter will ferment and batter would have rised up. So place the batter in a big container in the evening itself. The batter rises up well. I mixed the batter with ladle before taking a photo so could not post a picture of fermented batter.
- Now take the required quantity of batter in a vessel and keep the rest of the batter in fridge. Add little water in the batter and mix it. Pour the batter upto 3/4 of the greased Idly mould. Do not pour the batter fully into the mould as the idly should get space to rise or puff up. Pour required water in Idly cooker and after it boils place the idly mould in the cooker. Steam it for about 15 to 20 minutes on medium low flame.
- After the cooker cools down a bit remove the idly from the moulds. The idly comes out very well and easily from the mould as regular idly.
- You can even make crispy dosas from the same batter. Serve these Multi Millets Idly Dosa with chutney and Milagai podi.
