  1. Use 3 dried red bullet chillies, crushed (optional)
  2. Take Juice of 1 large lemon
  3. Prepare 2 small bay leaves
  4. Prepare 1 tsp dried wild oregano/shop brought oregano will do

  6. Get 4 , garlic cloves, peeled and minced

  8. Get 5 large pork belly slices

  1. Mix all the herbs and spices in a bowl.
  2. Place the pork in a bowl and rub the marinade well into the meat. Allow to marinade in the fridge for at least 4 hours, preferably overnight for better flavours.
  3. Heat the coals up or gas barbecue and cook through. Cooking times vary, these pork strips took about 20 minutes or so to cook through.
