The ingredients needed to make Broccoli almond soup:
  1. Use 1 cup Broccoli florets
  2. Get 1 and 1/2 cup milk
  3. Use 1 medium size onion
  4. Provide 4 garlic cloves
  5. Prepare 1/3 cup almonds
  6. You need Salt (as per taste)
  7. Provide Olive oil
  8. Provide Pepper (coarsely ground)
Steps to make Broccoli almond soup:
  1. Firstly soak almonds in hot water for about 10min. Later peel the skin and keep them aside
  2. Slice the onion and fine chop the garlic. Cut broccoli into florets
  3. Take a pan and add around 3 tsp of olive oil. Once heated add the chopped onion and garlic and allow it to cook.
  4. Once the onion turns soft and translucent add the broccoli florets and stem cook till the florets become soft fr about 5 to 7 min. Sprinkle some salt. Do not overcook the broccoli.
  5. Once the mixture is cooled transfer it into a blender add the almonds and milk and blend into smooth puree.
  6. Then transfer the broccoli puree into a saucepan and bring it to brisk boil (can add little water to adjust the consistency) and then check for salt and adjust according to taste.
  7. Finally transfer it into soup bowl and sprinkle some coarsely ground pepper.
